1 tsp olive oil
2 cloves garlic
1/2 cup yellow onion
1 cup carrots, chopped
1 can (15 oz) canned chick peas rinsed
1/4 tsp salt- more or less to taste
pepper to taste
6 cups nappa cabbage, shredded
1/2 cup cooked sweet potato, skin removed
2 cups stock (vegetable, or chicken)
2 bay leaves
Start with a large pot.
Saute chopped onion and garlic in the olive oil till translucent
Add carrots, cubed sweet potatoes and chick peas.
Season with salt and pepper to taste
Add shredded cabbage and cook till it starts to wilt down.
Pour stock over the cabbage.
Add bay leaves
Cover and simmer 40 minutes
