3 cup cauliflower
2 tsp olive oil
1/2 cup chopped onion
2 cloves garlic
1 can no salt added diced tomatoes
2 tbsp capers, drained
1/4 cup parmesan cheese
heat oil in saucepan, add onion and garlic. Cook for 5 minutes on low heat. Add tomatoes and capers. Increase heat and simmer for 5 minutes.
Place tomato mixture in a 2 quart gratin dish top with cauliflower. Sprinkle cheese on top.
Place under broiler for 5 minutes or till top is brown.
Serves 4 as a side 2 as a main dish
