Plantain Stew

Introduction

Number of Servings: 40

Ingredients

    5 Tbsp. oil]
    5 onions
    20 cloves garlic
    10 medium-large plantains
    5 bell peppers
    20 tomatoes
    5 jalapeno peppers
    20 cups beans (any variety)
    5 mangoes
    Cilantro, salt and pepper to taste
    40 cups cooked rice

Directions

1. In non stick medium/large pot, heat over medium heat. Add onion and cook, stirring often, until softened, about 5 minutes. Stir in garlic and cook, stirring, until onion is golden, about 3 minutes.

2. Stir in plantain, bell pepper, tomatoes, chili and 10 cups water. Bring to a boil. Reduce heat to low, cover and simmer until plantain is more tender but still firm, 5 to 10 minutes.

3. Stir in beans and simmer gently, uncovered, until heated through, about 5 minutes. Stir in mango and cook until heated through, about 1 minute. Stir in cilantro, salt and pepper to taste. Serve over rice.
