Introduction

This is an oatmeal/chocolate chip cookie recipe that I have adapted to be diabetic friendly. I substituted Splenda and Brown Splenda for the sugars. One could also sue carob chips instead of chocolate chips, but I didn't have any on hand. 2 cookies count for about 100 calories and 15 g of carbs. Ingredients

    1.5 c flour
    1 tsp baking soda
    1 tsp salt
    1 c margarine
    3/4 c Splenda brown sugar
    3/4 c Splenda
    2 eggs
    1 tsp vanilla
    2 c rolled oats
    1 c chocolate chips

Directions

Sift flour, measure, then sift again with baking soda and salt. Cream margarine with both sugars. Beat eggs into margarine/sugar mixture. Add vanilla and mix well. Stir in dry ingredients. Add oats and chips and mix thoroughly. Drop on ungreased cookie sheet. Bake 12-15 minutes at 350 degrees until lightly browned. Makes 96 small cookies.
