Make-Ahead Mashed Potatoes - 1/2 Cup Serving

Introduction

A twist from the mashed potatoe casseroles already in the database. But this is a little more precise than the ones I read.
There is still room to make it more healthy by substituting for the real butter and real cream cheese.

Number of Servings: 16

Ingredients

    5 lbs potatoes, peeled
    2 3-oz packages of cream cheese - softened to room temperature
    1 8-oz container of non fate sour cream
    2 tsp onion salt
    1 tsp salt
    2 tbs butter

Directions

Makes approximately 16 1/2-cup servings.

Cook potatoes in boiling salt water until tender; drain
Mash until smooth.
Add remaining ingredients and beat until fluffy.
Cool, cover, and refrigerate.
May be used anytime within two weeks.
To heat in oven, place desired amount in a greased casserole dish, dot with butter and bake for 30 minutes at 350 degrees
