1.5 tbls whipped butter
1/3 c half and half
5 minced cloves of garlic
1/2 c 2% shredded cheddar
1/2 c non fat shredded cheddar
2 med to large sweet potatoes, skinned and sliced
1/4 c eggbeaters
Salt and pepper to taste
Toss potatoes, onions and garlic in butter and then add to a glass casserole dish.
Bake covered for 15 min.
Meanwhile mix eggs, half and half and cheese. Remove casserole cover and pour mixture over potatoes.
Return to oven for another 15 to 20 minutes or until browned.
