Anything goes rice casserole

Introduction

The basic directions for this casserole are for rice, veggies, protein (meat, beans or alternative protein) and cream of something soup. The nutrition here is for chicken, frozen broccoli stir fry, canned tomatoes and cream of broccoli cheese soup, but it can be endlessly adapted to your taste or what's in the cabinets/ fridge/ freezer. Works great with leftovers, too! Just add leftover meat and veggies to the rice and soup to "reinvent" your leftovers into a whole new dish. Ingredients

    2 cups of minute brown rice
    1 can of chunk chicken breast, drained
    1 can of diced tomatoes
    1 family-sized (26 oz) can of cream of something soup (reduced fat or low sodium, if available)
    1 bag of frozen broccoli stir fry
    1/2 cup shredded cheese

Tips

Using the large, family-sized can of soup will make this more creamy. Use less if you prefer the rice casserole to be more firm.


Directions

* Prepare the rice according to package directions in a large pot.
* After the rice is done, mix together the protein (chicken), veggies, and soup the pot.
* Transfer to a large baking dish and top with the shredded cheese.
* Bake at 350 deg F for 15-20 minutes or until the cheese is melted and the mix is warm and bubbly.

Serves 8 (but it's so low calorie that you can easily have 2 servings and still come under 400 calories!)
