Mock Chicken Fideo

Introduction

Chinese canned gluten (mock chicken) is used in this recipe, but you can use any vegetarian chicken substitute you choose (or chicken, if you're a meateater); the nutritional data will change accordingly.
Fideo is vermicelli pasta that's cut in very short lengths, about one inch. If you can't find fideo in your grocery store, you can substitute vermicelli broken in short pieces.

Recipe makes 8+ cups and will serve 4 to 6.
I like to serve this with refried beans and tortillas.

Ingredients

    1/2 Tbsp canola oil
    1 medium onion, diced
    4 cloves garlic, minced
    1 (10 ounce) can Vegetarian mock chicken, drained, sliced
    1 cup diced tomatoes (canned, no salt)
    1/4 tsp black pepper
    2 tsp ground cumin
    2 pinches cayenne, or more to taste
    4 cups water
    1 tsp Better Than Bouillon No Chicken soup base
    1 (7 ounce) pkg Fideo pasta
    1 cup frozen corn

Directions

In nonstick Dutch oven, saute onion in oil over medium heat 2 to 3 minutes 'til onion is tender and begins to brown. Add mock chicken, garlic, and black pepper. Saute 'til gluten begins to brown. Add cumin and cayenne; stir and cook 1 minute to toast spices. Add tomato; stir and cook 3 or 4 minutes. Add water and bouillon. Bring to boil. Add zucchini and fideo. Cook 5 minutes. Stir in corn and simmer 3 minutes more. Pasta will absorb the liquid. Adjust seasonings and serve.
