Garlic Lime Chicken

Ingredients

    4 chicken drumsticks
    4 chicken breast filets, boneless & skinless
    1 t salt
    1 t black pepper
    1 t cayenne (or less if you don't like spicy)
    1 t garlic powder
    1/2 t thyme
    1/2 t paprika
    2 T butter
    2 T Extra virgin olive oil
    1 c chicken broth
    Juice of a lime

Directions

Wash chicken pieces in cold running water. Pat dry with paper towel. Mix spices in a small bowl. Add butter & olive oil to large skillet and heat on med-high. Sprinkle spices onto both sides of chicken pieces and place in hot skillet. Brown on each side, approx. 8-10 minutes per side. Remove from pan and add broth & lime juice; bring to a boil and scrape the pan. Cook until slightly reduced, then add the chicken back to the pan. Bring back to a boil, then reduce heat and simmer until chicken is done.

I calculated the serving as one drumstick and one breast fillet per person (I use 4-oz. breast fillets from Schwan's.)
