Healthy Oatmeal Raisin Cookies

Ingredients

3/4 cup whole wheat flour
1/3 cup wheat germ
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1 TBS Smart Balance Light Buttery Spread
1/3 c granulated sugar
1/2 c brown sugar, packed
1 egg
1/4 c applesauce
1 tsp vanilla
1 1/3 c old-fashioned oats
1/2 c raisins
Directions
1. Preheat oven to 375 degrees.
2. Mix together flour, wheat germ, baking powder, baking soda, and salt in a small bowl.
3. In a large bowl, cream together Smart Balance spread and sugars. Add egg, applesauce, and vanilla.
4. Gradually add in dry ingredients, then oatmeal and raisins.
5. Drop by rounded measuring teaspoon on baking sheet sprayed with cooking spray. You will have enough for 36 cookies.
6. Bake for 5 minutes. Rotate cookie sheets for even baking, and bake an additional 5 minutes. Remove from oven and let cool.
Makes 36 medium-sized cookies.
