Pumpkin Soup

Introduction

Never heard of this before I visited Belgium in 2009. Friends cooked it for me and I just had to have the recipe to share. Never heard of this before I visited Belgium in 2009. Friends cooked it for me and I just had to have the recipe to share.
Number of Servings: 6

Ingredients

    2 lbs Pumpkin - cubed
    3 Onions - sliced
    3 Carrots - sliced
    3 Potatoes - cubed
    1 Chili Pepper - minced
    8 Cups water
    4 Bullion Cubes
    2 Tbsp Butter
    6 Tbsp Light Table Cream
    2 Tsp salt
    1 Tsp pepper

Directions

Clean the inside of the pumpkin. Use a potato peeler to remove the outer skin and cube to bite size.

Slice all vegtables and caramelize them in the butter.
Add the water and bullion cubes.
Boil for about 20-30 minutes.
Remove from heat and add cream.

(Note - I rarely have cream around so most of the time I do not use it - still a great soup)
