Easy Coq au Vin


Number of Servings: 4


    4 boneless chicken breasts, pounded flat
    Flour, salt and pepper for dredging
    1 jar sliced mushrooms or fresh sliced mushrooms
    1 tablespoon butter
    1 tablespoon olive oil
    1/2 cup white wine
    1/2 cup onion


Melt butter with olive oil in a skillet. Dredge chicken in flour, salt and pepper. Brown on both sides and remove from pan. Saute mushrooms and onions in same skillet until brown, scraping up brown bits. Add wine to mushrooms and stir. Add chicken back to skillet, cover an simmer, until chicken is cooked through. Remove lid and continue to cook until sauce thickens. Serve on a platter topped with mushroom sauce.
