Chicken Mushroom Alfredo

Introduction

Tasty creamy sauce over pasta. Tasty creamy sauce over pasta.
Number of Servings: 4

Ingredients

    3 Cups cooked whole wheat spaghetti
    6 oz Fat Free Sour Cream
    6 oz Light Cream Cheese
    Whole boneless skinless Chicken Breast cut into 1 inch pieces
    1 cup fresh mushrooms (Pieces)
    1 cup diced carrots
    1/4 cup low sodium chicken broth
    1/4 cup grated Parmesan cheese
    1/4 cup feta cheese
    2 tsp crushed red pepper flakes
    1 tsp minced garlic
    2 tbs Olive Oil


Directions

Saute onions until tender in Olive Oil. When onions are tender add chicken, mushrooms, carrots, and garlic. and cook until chicken is done.

Add chicken broth and bring to a boil lower heat and add cream cheese, sour cream and Parmesan. Stir until mixed in.

Add Feta Cheese and crushed red pepper. (If you like it spicy, add more crushed pepper.) Stir in the pasta . If the sauce is too thin you can add more Parmesan to thicken it up.

Yields 4 one-cup servings.
