Pumpkin Chocolate Chip Cookies

Introduction

Ingredients

1/2 c. shortening
1 1/2 c. sugar
1 large egg
1 c. canned pumpkin
1 tsp. vanilla extract
2 1/2 c. flour
1 tsp. baking powder
1 tsp. baking soda
1 tsp. salt
1 tsp. ground cinnamon
1 tsp. ground nutmeg
1 c. semisweet chocolate chips
1/2 c. chopped walnuts (optional)
Directions
1. Heat oven to 350 degrees. Grease or spray cookie sheets.
2. In a mixing bowl, cream together the shortening and sugar until light and fluffy. Beat in the egg. Add the pumpkin and vanilla to the wet mix until combined.
3. In a seperate bowl, combine the flour and the next 5 ingredients. Slowly add the flour mixture to the pumpkin mixture until combined. Stir in the chocolate chips.
4. Drop teaspoons full onto cookie sheets and bake for 15 minutes or until brown. Be sure not to overbake. Makes 5 dozen.
