Pumpkin Chocolate Chip Cookies

Introduction

Ingredients

    1/2 c. shortening
    1 1/2 c. sugar
    1 large egg
    1 c. canned pumpkin
    1 tsp. vanilla extract
    2 1/2 c. flour
    1 tsp. baking powder
    1 tsp. baking soda
    1 tsp. salt
    1 tsp. ground cinnamon
    1 tsp. ground nutmeg
    1 c. semisweet chocolate chips
    1/2 c. chopped walnuts (optional)

Directions

1. Heat oven to 350 degrees. Grease or spray cookie sheets.

2. In a mixing bowl, cream together the shortening and sugar until light and fluffy. Beat in the egg. Add the pumpkin and vanilla to the wet mix until combined.

3. In a seperate bowl, combine the flour and the next 5 ingredients. Slowly add the flour mixture to the pumpkin mixture until combined. Stir in the chocolate chips.

4. Drop teaspoons full onto cookie sheets and bake for 15 minutes or until brown. Be sure not to overbake. Makes 5 dozen.

5. Indulge and enjoy!!

  • going to sub oil with coconut oil, sf chips and stevia and splenda brown sugar for regular sugar, almond and rice flours as well will be using...do not fear flour alternatives for white flour - 12/20/10

  • These are amazing!! I used 1 1/2 cups of chocolate chips and used 1/2 oat flour and 1/2 regular flour. I also made them a bit bigger but they were still very reasonable in calories. Thanks for the great recipe!!!! - 1/27/10

  • Raisins work as a good chip substitute as well. 15 min exactly was perfect (just browning on the bottom). My roommate stole 4 before I could get them off the pan. Definite win! - 12/20/09

  • I used a sugar substitute, cutting the calories by 1/3 and I used carob instead of chocolate chips (didn't figure calories on this yet). YUUUMMMMYYYYY!!!
