Potato soup

Number of Servings: 15

Ingredients

    9 med. baked potatoes
    1/2 lb. unsalted butter
    1 med. onion
    1 1/2 lb. fried bacon (crispy)
    8 oz. swiss cheese
    8 oz. cheddar cheese
    4 oz. chicken base
    1/2 gallon hot water
    1/2 gallon milk
    1 cup flour

Directions

1. Melt butter
2. Add onions, cook til tender
3. Mix in flour to make paste
4. Wisk in water
5. Wisk in chicken paste
6. Wisk in milk
7. Add cheese in small chuncks
8. Add potatoes (diced)
9. Add bacon (cooked til crispy)

Stir constantly to prevent sticking

Cook over med heat.

Makes 15 1-cup servings
