Cream of Chicken Rice Soup

Introduction

Fairly easy to make with leftover chicken. I used what was leftover from a whole chicken I cooked in a crockpot. Fairly easy to make with leftover chicken. I used what was leftover from a whole chicken I cooked in a crockpot.
Number of Servings: 4

Ingredients

    1 - 11/2 cups of cooked brown rice
    6 T butter
    1 medium onion diced
    4 celery stalks diced
    3 C chicken broth
    2 C skim milk
    1/2 C flour
    1-2 C diced or shredded chicken, cooked
    Salt & Pepper

Directions

Cook rice according to instructions ( I used 1 C chicken broth instead of water)
sautee onion and celery in butter until translucent (about 8 min)
Add chicken broth, milk and flour, stirring all ingredients together well. Bring to a boil.
Let simmer a couple of minutes, stirring frequently
Add cooked chicken and rice.
Add salt and pepper to taste.
Simmer until ready to eat & enjoy!!!
