A great way to use up leftover mashed potatoes! It's spicy and satisfying. A great way to use up leftover mashed potatoes! It's spicy and satisfying.
Number of Servings: 4


    Frozen chicken
    Frozen bag of italian vegetables (or a bag of any mixed veggies)
    Nacho cheese from a jar, about four heaping spoonfuls
    Can of Rotel (tomatoes and green chiles)
    About two cups of mashed potatoes


Open the bag of frozen veggies and dump into a casserole dish. In a bowl, mix the can of rotel and the nacho cheese together. Add mixture to the frozen veggies and stir. Lay pieces of chicken on top of the vegetable mixture. Cover the entire dish with mashed potatoes. Place in an oven at 350 degrees for about an hour and a half. Check chicken to make sure it is done cooking.

To reduce cooking time, thaw chicken under hot water. Also thaw vegetables by placing them in a strainer and running hot water over them.
