Ingredients
-
6 1/3 Cup Flour
1 Egg
1 Tbsp Lemon Juice
2 1/3 Cup Lard
1 tsp Baking Powder
3/4 cup water
Directions
Break egg into measuring cup, beat with fork; add lemon juice and water to measure 3/4 cup (total with egg and lemon juice). Beat again.
Sift flour into a bowl. Cut in lard with pastry blender until no pieces are larger than a pea. Sprinkle the water & egg mixture and mix with a fork from the bottom up. Too much moisture make pastry tough. Not enough makes it hard to roll out the dough.
When the flour appears damp, roll it into a ball. do not knead it.
Chill the dough. Divide into 6 pieces and roll out on lightly floured board. dough should be rolled to 1/4 inch in thickness.
Bake at 425 for 10-12 minutes (a bit longer when cooking frozen.
