Double Corn Casserole

Ingredients

    1 can creamed corn
    1 can fresh corn
    1/3 cup olive oil
    1 cup tofu (blended)
    Jiffy Cornbread mix
    dash salt
    dash pepper

Directions

Blend the tofu so it is smooth
Mix all ingredients except for cornbread mix.

Spread corn in casserole dish
Spread cornbread mix on top
Bake for 40 minutes
