Introduction

Substitutes for the Betty Crocker Carrot Cake Substitutes for the Betty Crocker Carrot Cake

Ingredients

    Cake:
    Betty Crocker Super Moist Carrot Cake, 18 oz pkg
    Banana, fresh, .5 cup, mashed
    Egg substitute, liquid (Egg Beaters), .25 cup
    **Flax Seed Meal (ground flax), 1 tbsp
    Water, 1 cup (8 fl oz)

    Icing:
    Neufchatel, 8 oz
    Splenda blend for baking: 2 Tbsp
    Vanilla extract, 1 tsp

Directions

Heat oven to 350 degrees. Mix cake ingredients for 2 min with mixer. Pour into any pan, but adjust bake time according to directions on box (depends on size of pan).

I frost with a neufchatel (lower fat than cream cheese) icing. Mix icing ingredients in mixer and frost cake.
