Turtle Pie

Ingredients

    1 reduced fat graham cracker pie crust
    8 oz Cool Whip Free
    7 oz jar marshmallow creme
    8 oz neufchatel cheese
    1 tsp vanilla extract
    1/3 cup dark chocolate chips
    1/3 cup caramel sauce
    1 cup pecan halves

Directions

Toast pecans in a skillet over medium heat for about 5 minutes.
Chop 1/2 of the pecans and set aside.
Melt chocolate in the microwave for about 30 seconds and stir, repeat until smooth.
Pour about 2/3 of the melted chocolate into the pie crust and spread evenly.
Sprinkle the chopped pecans over the chocolate.
In a mixing bowl, combine the neufchatel cheese, vanilla, and marshmallow creme mix until smooth.
Fold in the Cool Whip.
Fold in 2/3 of the caramel sauce - until ribboned through.
Pour mixture into the pie crust.
Drizzle with remaining caramel sauce and melted chocolate.
Top with remaining pecan halves.
Refridgerate several hours before serving.
Cut into 8 wedges.

  • strange little recipe....actually its a strange name, sounded like it was going to be cooked turtle or something...almost got a heart-attack cause i'm all about the environment and stuff. sorry for the long-winded comment,but i think that i'll goo try the recipe this weekend. Bye - 9/12/07
