Christmas Nut cups

Ingredients

    3/4 cup unslated butter
    8 oz Nuefchatel Cheese (light cream cheese)
    2 cups all Purpose flour
    Filling:
    3/4 Splenda Brown Sugar Blend
    2 Large eggs
    1 Tbsp Butter melted
    1 cup finely chopped walnuts
    1 tsp maple extract

Directions

In a bowl, combine room temp butter and cheese with a mixer until well combined, gradually add flour beating until a ball forms. Wrap in plastic wrap and refridgerate for at least 15 minutes. In anopther bowl make filling by combining eggs, brown sugar blend, 1 Tbsp Melted butter. Fold in nuts
Roll dough into 1" balls and place in a greased mini muffin pan and press into the bottom and up sides of each cup. Spoon filling evenly into each cup and bake at 350 for 20-30 minutes until golden brown. Cool in pan for 2-3 minutes until removing from pan to cool completely on wire racks.
makes 40-46 cookies
