Renee's Curried Chick peas

Introduction

Number of Servings: 6

Ingredients

    2 cups of Chick Peas
    0.5 cup of coconut milk
    2 tbsp of yellow curry powder (mild)
    1/4 red onion
    1/4 green bell pepper
    1/2 yellow squash ( chopped)
    1-2 cloves of garlic
    2 plum tomatoes
    0.5 cup of H2O
    1-2 Tbsp of Olive oil

Directions

Cut veggies and cook in olive oil. add garlic and curry powder . Cook for about 5-6 minutes and then add coconut milk and water . Stir and bring to a low boil. Cook for about 10 minutes and then add tomatoes.

Serve alone with steamed broccoli or add some brown rice . Serves 4-6 .
