Reduced Fat Broccoli Cheddar Soup

Introduction

Number of Servings: 4

Ingredients

    4 packages frozen broccoli (40 oz)
    1/2 block reduced fat cheddar cheese (4 oz)
    6 cups vegetable broth
    1/2 cup skim milk
    salt
    pepper

Directions

Puree 2 packages of broccoli, set aside
In a large sauce pan bring the rest of the broccoli and the broth to a boil. Reduce heat and simmer until broccoli is tender (about 10 minutes)
Shred cheese; set aside.
Pour the broccoli and about 1/2 cup of broth into your blender or food processor. Chop the broccoli to the desired size.
Return the broccoli and broth to the saucepan, adding pureed broccoli.
Stir in milk. Salt and pepper to taste.
Let simmer until heated through (about 5 minutes).
Remove from heat.
Stir in cheese and stir until melted.
