Pork stuffed with apples

Introduction

A fall pork dish! A fall pork dish!
Number of Servings: 4

Ingredients

    1.25 lb pork tenderloin
    3 apples
    1/2 cup chopped onions
    1/2 cup chopped celery
    nutmeg to taste
    cinnamon to taste
    1/2 tsp splenda brown sugar
    1.5 oz marsala wine

Directions

Serving size - two pieces

Mix in a bowl, 2 peel and chopped apples, onions, celery, nutmeg, cinnamon, Splenda brown sugar. Cut tenderloin length wise, but not in half. Spoon in mixture, close tight with string. Spoon the remaining stuffing on top of the pork. Cut up the remaining apple and place around pork, add a bit more nutmeg and cinnamon to taste. Pour over marsala wine,
bake at 350˚ for one hour, uncovered.
