Mediterranean Lentils (IWILLTRANSFORM's recipe)

Number of Servings: 6

Ingredients

    1 1/2 cup chopped kale
    230 grams french lentils
    3 cloves of garlic
    1 small onion
    3 stalks of celery
    1 tomato
    3 C low sodium vegetable broth
    1 T basil
    3 T balasamic vinegar
    Salt and Pepper to tast

Directions

Makes 4 apprx 1 Cup Servings

Chop garlic, onion, and celery. Add to heated saute pan coated with 2 tsp of olive oil. Cook until translucent. Add rinsed lentils, tomato and vegetable broth. Bring to boil. Simmer 5 minutes covered. Add basil and balsamic and simmer covered an additional 30-45 min or until lentils are done. Stir occasionally. Add more liquid if needed. Add salt and pepper to taste. Enjoy!
