Snow Chili

Introduction

This is a great meal for the first snowy day of the year. Put the ingredients in your slow cooker, then head outside for a few hours of snow ball fights and snow people building. It'll be waiting, ready to warm you up! This is a great meal for the first snowy day of the year. Put the ingredients in your slow cooker, then head outside for a few hours of snow ball fights and snow people building. It'll be waiting, ready to warm you up!
Number of Servings: 8

Ingredients

    8 oz cubed chicken breast
    1 medium onion, chopped
    2 cans Navy beans (or 3-4 cups homemade)
    4 cups chicken broth
    1 c uncooked white rice
    5-6 slices of jalapeno
    1 tsp white pepper
    2 tsp cumin
    Optional: 1 cup white corn (If you've got it handy, but don't use yellow corn ... you know what they say about the yellow snow!)

Directions

Saute onions and cook chicken breast in frying pan. Combine all ingredients in crock pot, cook on high 2-3 hours, until rice is done. Enjoy!

Makes 8 1-cup servings.
