Greek Tomato-Feta Chicken CutletsSubmitted by: MOPSIE2002
4 (3 oz) thin-sliced chicken breast cutlets
1 tsp dried oregano
1/2 tsp salt
1/2 tsp ground pepper
1 1/2 tsp extra virgin olive oil
1 pint cherry tomatoes, quartered
1 clove garlic, minced
1/2 tsp grated lemon zest (lemon peel)
1 medium cucumber, peeled and diced
1/4 cup feta cheese
1/4 cup chopped fresh mint
2) Add the remaining 1/2 tsp oil to the same skillet, then add the tomatoes, garlic, lemon zest, and the remaining 1/4 tsp each of salt and pepper. Cook over medium-high heat, stirring often, until the tomatoes soften and collapse, about 3 minutes.
3) Spoon the sauce over the chicken, then sprinkle with the cucumber, cheese, and mint.
Serves four light eaters (my boyfriend ate two servings), recommended over white or brown rice.
