Not Just Banana's Nut Bread

Introduction

This version of banana nut bread has been perfected over much trial and error. While it is perfectly sweet and moist as banana nut bread should be, it much healthier. The moisture comes from the margarine and pumpkin instead of oil or butter. This version of banana nut bread has been perfected over much trial and error. Ingredients

    2 c all-purpose flour
    2 tsp baking boda
    1 tsp salt
    1 c Granulated Sugar
    1/2 c Splenda
    1/2 c margarine
    3 tbsp DaVinci Gourmet Vanilla Syrup Sugar Free
    3 large eggs + 2 egg whites, beaten
    3 over ripe bananas, mashed (or 2 cups)
    1/2 c pure pumpkin, canned
    1/2 c semi-sweet chocolate morsels
    1/2 c chopped pecans

Directions

Sift flour, baking soda and salt in large bowl. Set aside. Cream margarine, sugar, & splenda in large bowl. Stir in syrup, eggs, bananas, & pumpkin. Add pecans and chocolate chips, mixing just until combined. Divide mixture evenly into 2, greased and floured, non-stick loaf pans. Bake at 350 for 60-70 mins, transferring to lower oven rack for last 20 mins. Cool on wire rack for 20 mins before releasing from pans. Then cool an additional 30 mins before slicing. Best stored in airtight container in refrigerator and eaten at room temp.
