White Chili

Ingredients

    1 can drained Whole Kernel Corn
    2 cans Great Northern Beans
    6 Chicken Thighs, bone and skin removed, large chopped
    Onions, raw, 1 large, large chopped
    Parsley, dried, 2 tbsp
    Ground Cumin, 1 tsp
    Pepper, white, 1 tsp
    Chopped Green Chili Peppers, canned (8 oz)

Directions

Sauté onions in 1 tsp olive oil. Add chicken and cook until done. Add the rest of the ingredients and simmer for about 40 minutes. It's better the next day!
