Introduction

Tasty & colorful, this dish is something my family likes that also meets all my dietary restrictions: low sodium, low carb, no more than one serving green vegetable per day. I so miss soup & salad lunches. The zuchini will cook down and thicken the soup without the need to add a thickener/additional carb. Ingredients

    Ingredients:
    Beef, eye of round, 24 oz , cubed
    *Canola Oil, 1 tbsp
    Onions, raw, 1.5 cup, chopped
    Celery, raw, 1.5 cup, diced
    *Zuchini Squash 1 cup(124 g) includes skin, 1.5 cup
    Carrots, raw, 2 cup, chopped
    Red Potato, 600 grams 3 3" long 2" wide potatoes diced
    Mushrooms, fresh, 1.5 cup, pieces or slices
    Garlic, 1 clove minced
    Lea & Perrins, Worcestershire Sauce, 2 tsp
    *liquid smoke, natural mesquite, Colgin brand .3 tsp
    Basil, 1.5 tsp or to taste
    Rosemary, .5 tsp or to taste
    Pepper, black, .5 tsp or to taste
    cayenne pepper to taste
    Water, tap, 4 cup (8 fl oz)
    *Sodium Free Beef Flavor Wyler's, 8 tsp
    Mixed Vegetables, frozen, 1 package (10 oz) about 2 cups or you can just use 1 cup peas or green beans & 1 cup corn

Directions

LOW SODIUM, Each cup = 1 carb
Brown meat in oil. add all other ingredients. Cover & simmer for 2 hours. Adjust seasonings - cayenne pepper or a shot of hot sauce are good. Makes 3 quarts or 12 servings. Can be frozen.
