Quick Chicken Rice

Introduction

Ingredients

    2/3 C minute brown rice
    2/3 C water
    2/3 C frozen mixed vegetables
    4 oz. Kirkland canned Chicken Breast in Water
    1 oz. Cento Roasted Red Peppers (from the jar)
    Soy sauce, sesame oil, or curry powder to taste (not included in calculations).

Directions

Combine minute brown rice, frozen mixed vegetables, and water in small saucepan. Bring to boil, reduce heat to low, cover and simmer for 7-8 minutes. Chop red pepper pieces. When rice mixture has simmered, stir in pepper bits, remove from heat and let stand several minutes until most of water has absorbed. Season to taste.

Makes 1 large serving, or 2 small ones.
