Almond Millk Eggnog :)

Introduction

Made this eggnog because we don't drink any dairy in our house and the Christmas season without eggnog is just not right. Made this eggnog because we don't drink any dairy in our house and the Christmas season without eggnog is just not right.
Number of Servings: 8

Ingredients

    6 eggs
    2 egg yolks
    1/4 cup sugar
    1 1/2 tsp stevia plus
    1/4 tsp salt
    8 cups almond milk (divided)
    1 TBS vanilla
    1/2 tsp Nutmeg

Directions

Place eggs, yolks, sugar, stevia and salt in blender and blend on low until combined (if using sweetener besides powdered stevia you can just use a whisk, I had to use the blender because my stevia clumped). Pour into a large saucepan and slowly whisk in 4 cups almond milk. Cook over low heat 20-30 minutes until it's thick and coats the back of a spoon.

Strain into a large bowl and place plastic wrap on top to prevent a film from forming. Refrigerate for at least 3 hours and up to 2 days.

Mix with 4 more cups almond milk to thin before serving.
