Incredible Italian Sauce

Introduction

This recipe was inspired by John Campbell who has a great recipe for lasagne. I modified it to my taste and thinned it to use with pasta. It is a large recipe and is meant to be used with an entire pound of pasta. I set the servings at 10 but it can easily go further.

I grew up in an Italian household and this is the closest I have seen to Grandma's sauce. Enjoy.

Number of Servings: 10

Ingredients

    1 Pound Sweet Italian Sausage
    3/4 Pound Lean Ground Beef
    1/2 Cup minced onion
    2 Cloves garlic, crushed (I use minced - prepared)
    2 - 28 oz Cans Crushed Tomatoes
    2 - 15 oz Cans Tomato Sauce
    1 - 6 oz Can Tomato Paste
    1 cup water
    2 tbsp white sugar
    1 1/2 tsp dried basil leaves
    1 tsp Italian seasoning
    1 tbsp sea salt
    1/4 tsp fresh ground black pepper
    4 tbsp chopped fresh parsley

Directions

SAUCE
Mix dry ingredients in a bowl and set aside.
Brown sausage, ground beef, onion and garlic over medium heat and drain.
Add crushed tomatoes, tomato sauce, tomato paste and water (add more or less water depending on your personal preference for sauce thickness)
Simmer covered for 2 hours (add water if it thickens too much)

PASTA
Bring a large pto of water with some Extra Vigrin Olive Oil and sea salt added, to a boil.
Add 1 pound of pasta of your choice (I use rigitoni) and cook to your preferred texture.
Drain and add to a preparation dish.

PRESENTATION
In a large bowl add some parmesean cheese to the bottom
Ladle 1/3 of the sauce over the parmesean cheese
Add 1/2 the pasta
Ladle 1/3 the sauce of the pasta
Add remaining pasta
Ladle the rest of the sauce over the pasta
Add seasoning to taste (Parmesean cheese, Romano Cheest, Crushed Red Pepper, etc.)
