Squash Pancakes

Ingredients

    6 baby Carrots shredded
    1/4 of acorn squash Shredded
    1 egg
    1/8 cup whole wheat flour
    1 t packed brown sugar
    1/2 t cinnamon
    2 T currants.
    1 T flax seeds

Directions

Mix together egg and flour add cinnamon and sugar Then add squash and carrots and remainder of ingredients. Fry up in a non stick grittle over medium heat.


This is one Serving by itself, but if you were going to serve it with other things, you could break it into 2 servings.
