Josh's mom's navy bean soup

Introduction

Vegetarian version of an old favorite Vegetarian version of an old favorite
Number of Servings: 8

Ingredients

    Beans, navy, 2 cup
    Water, tap, 12 cup (8 fl oz)
    Onions, raw, 1 large chopped
    Celery, raw, 2 stalk with leaves, large (11"-12" long) chopped
    Olive Oil, 4 tbsp
    Parsley, .25 cup whole
    Bay Leaf, 2 whole
    peppercorns, 1 t
    1 t dried thyme
    *Better Than Boullion Vegetable, 2 tsp
    Corn starch, cold water (2T-1/4 C to start with)

Directions

Place all ingredients into dutch oven or soup pot. Bring to boil over medium high heat, then reduce heat to simmer, partially cover, and cook for 1-1.5 hours or until beans are tender. Adjust seasonings to taste, remove parsley and bay leaves. Once beans are tender and seasoning is OK, thicken using corn starch. Add 1 T cornstarch to cold water, mix until blended, add to simmering soup, stir, repeat until soup is desired thickness. Makes 8 one cup servings. You can swap out dried lima beans for navy beans if you 'd like a change.
