Creamy Shrimp Pasta

Creamy Shrimp Pasta

Introduction

Great for a quick weeknight dinner! Great for a quick weeknight dinner!
Number of Servings: 6

Ingredients

    8 ounces fettucine
    1 pound medium shrimp, fresh or frozen
    1 (8-oz) package Neufchatel reduced-fat cream cheese
    1 cup chicken broth
    5 ounces frozen spinach, thawed and excess moisture removed
    1 cup Parmesan cheese, grated
    2 cloves garlic
    salt & pepper to taste

Directions

Cook fettuccine as directed on package

Meanwhile, heat large skillet or pat to medium-high heat.

Add cream cheese and chicken broth, cook stir 3 to 4 minutes until cream cheese is melted and mixture is blended well.

Add Parmesan cheese, garlic and salt & pepper to taste.

Add shrimp and stir until cooked thru (if using frozen shrimp, until heated thru). Add spinach and stir well.
Drain pasta; place in a large bowl.
Stir in shrimp mixture.

ADD INS- Toss in 2 medium tomatoes for taste and color!

    I just loved it. Adjusted the parmeganto 3 tablespoons. douoble the amount of spinach, used 13 3/4 oz of pasta it was enough for 6 people. It will be a regular in my house - 4/28/09

    Quick & easy! My family enjoyed this, they didn't even realize it was a healthy version. I used a 14 oz can of chicken broth and broccoli instead of spinach. Sauce was kind of thick, next time I will use less parm cheese. The sauce will make a good base for other pasta dishes also. - 3/14/09

    This was very good....I tried to lighten up calories so used only 1/2 the cream cheese, and substituted fat free sour cream. Added some red pepper and extra garlic, for flavor, and served with whole grain penne pasta. Everyone loved it! - 3/18/08

    My teenage son made this for dinner tonight and we loved it! He sauteed fresh spinach in garlic instead of using frozen. It was a filling meal, and we will use the sauce with broccoli and chicken next time. - 6/14/09

    Excellent! I altered it a bit... I sauteed garlic (a bit more than specified since we are garlic lovers), basil, sun dried tomatoes & 1/4 onion in a bit of oil from the sun dried tomatoes. I used less parmesan, low fat cream cheese, fat free chicken broth & Barilla Plus multigrain spaghetti. :-D - 7/9/10

    Great recipe, made it for a girls night out meal, used 99% Fat Free chicken broth and 1/3 less fat Great Value brand Neufchatel Cheese and this was wonderful. This recipe is a keeper. - 6/28/09

    Oh, so good! But when I checked it in my nutritional tracker, I discovered that it was high in Cholesterol. My fault, I should have checked before making the recipe. So, for a treat once in a whil,e great, but not too often! - 10/6/10

    Oh my!! I started with sauté of garlic and fresh spinach in a bit of olive oil...a pinch of red pepper flakes, then added cream cheese, broth, parm followed by shrimp, then pasta. I think I only had about 1/2 cup parm and that seemed to be plenty. You can always garnish with a bit more. Great! - 7/12/12

    Pretty good. My husband and I liked it, the kids not so much. Next time I will use a little less parm and try it with chicken and mushrooms. I also used light parm and light cream cheese to lighten the cals a bit. Thanks for posting the recipe :) - 5/11/09

    I used 1/2 container of low fat cream cheese and 1/2 container of Fat Free cream cheese with low fat Parmesan cheese cutting the calories even more and it was great! Paired with a salad it was easy and fast not to mention the taste was incredible. - 5/4/08

    Our family loves "shrimp-in-love"! One's tongue just wraps around the pasta and shrimp and leads to savoring the fine Italian restaurant taste. I used fresh spinach. Found the sauce a bit heavy & added a bit more chicken broth.Simple to prepare! Hard to resist 2nd/3rd helpings! At-zuh-taliano! - 5/26/11

  • Made this for myself because my boys dont like shrimp. Used low sodium, organic broth & didnt add the salt.. I used Wheat Luigini noodles & fresh spinach. Was good but wont be a reg in recipe rotation since my kids hate seafood. At least I have lunches now. :) - 7/29/14

  • Shrimp Alfredo is husbands favorite. Made per directions but used fresh spinach. It was great! It was alot of sauce for pasta, so ended up cooking more pasta to add for leftovers tomorrow. Could add any veggie. My problem it was too good for one serving, so had to log 1.5 servings:) - 10/6/13

  • This was great. I added more garlic and a cup of sliced mushrooms. It's high in cholesterol so I may tweek it a little in the future. It tastes like something I would get in a good restaurant. When I warmed up leftovers, I added some vegetable broth to it. It is as good warmed up as it was fresh. - 6/17/13

  • Great comfort food. I only used 8 oz. of pasta for two people but kept the ingredients the same - lots of rich and creamy sauce. also used cooked shrimp size med - 41-60 shrimp per lb. the cooking instructions on the pasta box 11 - 12 mins., will give you perfect al dente pasta - 1/24/13

  • Very good recipe! If you didn't know any better you would have no idea this was a healthy meal! I did cook the chicken broth and cream cheese longer than 3-4 minutes b/c the mixture was still lumpy after 4 minutes, I also cooked the shrimp in the oven before adding it to the recipe.   • This recipe is quick to make and extremely versatile. I've added a variety of vegetables - corn, broccoli, frozen mixed vegetable. I've substituted shredded chicken. I've even made this vegetarian by using vegetable broth and white beans.
