Chicken & Dumplings

Introduction

My own recipe for chicken & dumplings...the perfect Southern comfort food! My own recipe for chicken & dumplings...the perfect Southern comfort food!
Number of Servings: 14

Ingredients

    3 boneless, skinless chicken breasts, boiled and chopped
    7 1/2 c. water
    2 1/2 c. chicken broth
    1 c. diced celery
    1 c. chopped carrots
    1 c. chopped red onion
    1 Tbsp. butter or margarine
    3 tsp. chicken bouillon granules
    2 tubes buttermilk biscuit dough

Directions

Boil chicken in water until meat is cooked through. Allow to cool and chop in chunks.

In a large stockpot, saute celery, carrots and onion in 1 Tbsp. butter or margarine until soft and tender. Pour in the water and chicken broth. Add the chicken bouillon granules. Allow to simmer, then add the chicken. Cook on low, simmering for about 30 minutes.
Meanwhile, open the biscuit tubes and slice each biscuit round into 4 pieces. Slowly drop into pot; cover and let simmer an additional 30-45 minutes or until dough has risen and is cooked through.

*Note: The longer you let the soup simmer, the tastier it becomes. If you have awhile to wait, I suggest doing so.
