24-Hour Potatoes

Introduction

This creamy, zingy potato casserole has been a favorite for all family dinners in our family for 30 years. You can save some work by substituting frozen shredded hash brown potatoes but thaw & cook in microwave before assembling casserole. But it MUST be made the day before & refrigerated overnight (hence the name) to be really good! Ingredients

    8 large potatoes, boiled in skins (slightly underdone)
    1 tsp. dry mustard
    1/2 cup shredded cheddar cheese
    1-1/2 tsp. salt
    1/2 pint sour cream
    1 cup 2% milk
    pepper to taste
    pinch of ground nutmeg
    paprika for sprinkling
    2 T. unsalted butter

Directions

Remove peels from cooked potatoes and grate into casserole dish (8x11 or similar). Mix in remaining ingredients except paprika and butter. Sprinkle top with paprika and dot with small pieces of butter. Cover and refrigerate overnight. Remove from refrigerator 1 hour before baking. Bake at 350 degrees for 1 hour.
