Ingredients

    3 eggs, beaten
    1 oz feta, cubes or crumbled
    1 tomato, diced
    .5 C frozen spinach or 1 C fresh, chopped
    1 T olive oil

Directions

Place 1 T of olive oil in fry pan on med high heat. Prep veg as it heats. Beat eggs and pour into pan. Cook til firm around edges. Flip, place spinach, cheese and tomatoes onto eggs. Fold and cook til golden.
