1/2 medium apple, cored and diced
1/2 cup grapes, sliced in halves
3 T. non-fat plain yogurt
1 t. olive oil
1 T. dijon mustard
1 t. balsamic vinegar
1 t. sesame seeds
1 t. pumpkin seeds
1 T. flax seeds
6 leaves Romaine lettuce, thinly sliced
Put sesame seeds, pumpkin seeds and flax seeds in a coffee grinder, blender or food processor. Pulse into a fine powder. Add to yogurt mixture and stir to combine.
Add apples and grapes to yogurt mixture, tossing to completely cover fruit. Serve over lettuce.
Makes 1 large or 2 small salads.
