Pastry for single-crust 9-inch pie (I used Pillsbury refrigerated pie crust)
2 cups cooked, mashed sweet potatoes
1/2 cup liquid egg whites
1/2 cup sugar
1 tablespoon flour
1 teaspoon lemon juice
1 teaspoon vanilla
1/2 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1/2 teaspoon salt
1 can (12 ounces) fat-free evaporated milk
Mix sweet potato with electric mixer in large bowl until smooth. Stir in egg whites, sugar or Splenda, flour, lemon juice, vanilla, spices, salt and evaporated milk. Pour mixture into pastry shell.
Bake in preheated 400 F oven 40-45 minutes or until filling is set and sharp knife inserted near center comes out clean. Cool pie completely on wire rack; refrigerate until serving time.
Makes 8 servings.
