Bean and Barley Soup

Introduction

I used another SP's recipe as a springboard, but I used enough different ingredients that I needed a new nutritional count. This is how I made it. I used another SP's recipe as a springboard, but I used enough different ingredients that I needed a new nutritional count. This is how I made it.
Number of Servings: 4

Ingredients

    1 1/2 c. cooked black beans
    1 can (12 oz) diced tomatoes, undrained
    1 can (12 oz) green beans, drained
    1 can (12 oz) corn, drained
    1 c. cooked hulled barley
    1 T. dried onion flakes (optional)
    2 c. vegetable broth
    2 bay leaves
    Basil, garlic powder, Real Salt to taste
    2 T. nutritional yeast

Directions

Combine all ingredients except basil, garlic powder, salt and nutritional yeast in a large pot. Bring to a low simmer over medium heat, stirring occasionally. Add basil, garlic powder and Real Salt to taste. Continue simmering, stirring occasionally, for 15 minutes to allow flavors to blend.

Remove from heat and stir in nutritional yeast. Let stand 5 minutes.

Makes 4, 1 1/2 c. servings or 6, 1 c. servings (Nutritional information is for 4, 1 1/2 c. sized servings)
