Italian sausage pasta sauce

Delicious!! Delicious!!
Number of Servings: 9

Ingredients

    2 tsp olive oil
    1 chunked onion
    1 chunked red pepper
    1/3 pound chunked mushrooms
    2 pured garlic cloves
    1 can (28 oz) diced tomatoes
    1 tsp oregano
    6 big italian sausages
    1 1/2 cup of shredded mozzarella

Directions

Saute the onions, peppers garlic and mushrooms in the oil (not too long, you want them still crisp)
Put aside in a pot you can put in the oven, add the tomatoes, the oregano, salt and pepper to taste
Saute (in the same pan as the vegetables) the sausage cut in small pieces until golden
Mix with the vegetables
Sprinkle the cheese on top
Cover - Cook in a 350 oven for one hour
Serve with short pasta
Makes about 9 1 cup serving
