~2 cups of cherry tomatoes
2 oz. of part-skim mozzarella, the pearl type is best but shredded works fine too (just not as pretty)
10 large basil leaves, torn into small pieces
2 tbsp balsamic vinegar
2 tbsp extra-virgin olive oil
* Combine the tomatoes, mozzarella and torn basil leaves together
* Mix together the balsamic vinegar and olive oil until well-blended and then pour over the tomatoes
* Allow to sit for an hour or two for all the flavors to meld together.
Serves 4 (1/2 cup serving)
