8 corn tortillas, I use the 6 in ones
4 oz soy tempeh, steamed
8 oz neufchatel cheese, or any other cheese you like
salt to taste
put olive oil in skillet, on high heat place tortillas in skillet, add tempeh (steamed to warm it), add cheese, close quesadilla and cook in skillet until cheese is melted through, flipping quesadilla occasionally.
