Kung Pao Chicken, easy

Ingredients

    1/2 pound skinless boneless chicken breast, cubed
    1/4 teaspoon cayenne
    1/4 teaspoon salt
    1/4 teaspoon pepper
    2 cloves garlic, minced
    2 tbsp fresh ginger, minced
    1 cup peanuts, no salt
    1/2 lb. frozen stir fry vegetables
    1/2 cup water
    1 tbsp rice vinegar
    1 tbsp vegetarian stir fry sauce ("oyster" sauce)
    1 tbsp molasses
    2 tsp cornstarch
    1/4 tsp chili garlic sauce
    2 tbsp corn oil (or other vegetable oil), divided

Directions

Thaw, drain and blot vegetables (without heat).
Mix chicken with next 4 ingredients, set aside.
Mince garlic and ginger.
Mix water through chili garlic sauce, set aside.
Stir fry chicken with garlic and ginger in half the oil.
Add the peanuts, stir fry till chicken is done; remove.
Stir fry vegetables in remaining oil.
Add sauce mixture, stir.
Return chicken and peanuts to pan; combine.
Serve over rice.
Serves 2.
