Mashed Potato Quiche

Number of Servings: 6

Ingredients

    2 eggs
    1 cup milk
    1/2 cup mashed potatoes
    1/4 cup low fat shredded cheddar
    1/2 package Jiffy brand pie crust mix
    salt and pepper, to taste

Directions

Empty pie crust mix into large mixing bowl. Add 2 tbsp water, mix with fork until doughy. Form into ball, place on floured surface. Roll into thin pie crust and place into 9" pie pan. Dock bottom of crust with fork and bake blind at 350 degrees for 10 minutes (I place same sized pie pan inside to prevent bubbles). Remove from oven. Reduce heat to 325. Beat eggs, milk, and seasonings in bowl. Evenly disperse potatoes and cheese in pie crust. Fill with egg mixture. Bake at 325 for 30-40 minutes until top is golden brown and middle of pie is firm.
