Carrot Puff

Introduction

a family recipe, handed over to me that I wanted to put in here and share. a family recipe, handed over to me that I wanted to put in here and share.
Number of Servings: 8

Ingredients

    1# - Carrots, peeled & cut into 1" peices
    1/2 Cup - melted butter
    3 -Eggs
    1 Cup - Sugar
    1 Tbsp - Flour
    1 tsp - vanilla extract
    1 tsp - baking powder

Directions

Preheat oven to 350 degrees.

Grease 8" baking dish.

Cook carrots until tender and drain.

Place the rest of the ingrediets into a blender.

Add the carrots a half cup or less at a time.

Puree the mixture

Pour it into the baking dish.

Bake for 45 minutes or until firm.

Let stand for five minutes before serving.
