Baked Eggplant with Feta Cheese

Ingredients

1 small eggplant
1 medium tomato, diced
1 tbsp olive oil
2 tbsp chopped basil
2 clove garlic minced
1 oz feta cheese, crumbled
salt and pepper to taste
Directions
Preheat oven to 355
Cut eggplant into 1/2 in x 2 in slices. Fry lightly in olive oil until soft and gently browned.
Layer the eggplant in the bottom of a baking dish. Combine tomatoes, basil and garlic with salt and pepper to taste in a bowl. Put over the eggplant and top with feta cheese.
Bake for 45 minutes.
